Panagiota and Christopher and Special Olympics Youth Leaders from Cyprus who are leading a Youth Innovation Project to promote healthy eating habits and to develop the valuable life skill of cooking to Special Olympics athletes and Youth Leaders in their community.
Struck by the lack of inclusive virtual activities during the COVID-19 pandemic, Panagiota and Christopher will lead this project with a focus on making it engaging for participants and creating a sense of community. The Youth Leaders will send out invitations to local schools and athletes individually to participate. Panagiota and Christopher will consult with a dietician to receive recommended recipes in order to create virtual sessions and trainings for participants to follow along with as they cook the recipe, eventually to be served to their respective families.

Over the course of 3 months, Panagiota and Christopher hope to have over 3000 social media impressions through their promotion of healthy eating. To make the project more engaging for participants, they will allow the Youth Leaders to sign up for specific days where they themselves can lead a training for a specific recipe where others can follow along. Additionally, Panagiota and Christopher will encourage others to share pictures of their creations and progress which will be shared via social media. Panagiota and Christopher hope that this progress will serve as both a fun and practical outlet for youth in their community to engage with during this time of physical, not social, isolation as they build a Unified Generation in Cyprus and beyond.
